Dad's Sunday Mutton Curry

The story

"Every Sunday, Dad would take over the kitchen, switch on old Malayalam songs, and slow-cook mutton for hours. We'd hover around the pot fighting over who gets the last piece of bone marrow."

Ingredients

  • 750g mutton, bone-in
  • 3 onions, finely sliced
  • 2 tomatoes, chopped
  • Ginger-garlic paste, 2 tbsp
  • Garam masala, chilli, turmeric, coriander powder
  • Coconut oil, curry leaves

Method

  1. 1Marinate mutton with ginger-garlic, turmeric and salt for 30 mins.
  2. 2Brown onions deeply in coconut oil.
  3. 3Add spices, then mutton; sear for 10 minutes.
  4. 4Pressure cook with water until tender.
  5. 5Reduce gravy on low flame until oil rises. Finish with curry leaves.
